I purchased some Velveeta a few weeks ago and wondered what to do with it other than use it for dips and mac n cheese, so tonight whilst making meatballs, I chopped up 2oz of Velveeta and popped it in with my meat mixture, I then baked them with the usual tomato sauce and it was absolutley fantastic!!!!! good product, will definately be buying more!!

Heres a use for this cheese. There is a great recipe online for Chilis Chicken Enchilada Soup (which you cant get in the UK). The soup is amazing and if you go to RecipeZaar you can find the recipe for it (Masa Harina is cornflour). Velveeta cheese is the best make for this soup. I tried dairylea, which I thought might be like Velveeta, but it doesn't melt down properly. Try this soup, you will be buying Velveeta on a regular basis!
